In Honor of Lenten Fridays....Crawfish Fettuccine. (Nothing says penance like this many fat grams.)

Ingredients:

3 onions, chopped
3 stalks celery, chopped
2 bell peppers, chopped
3 cloves garlic, minced
3 sticks butter
1/4 cup flour
1 lb Velveeta
1/2 pint whipping cream
2 or 3 lbs. crawfish
1 lb. fettuccine noodles
2 tbsp. jalepeno relish
parmesan cheese (to sprinkle)

Saute onions, celery and bell pepper in butter. Add flour, stir and cover. Cook on low for 15 minutes. Add cream, cheese and garlic and stir until cheese melts. Add crawfish and cook for 30 minutes.

In a seperate pot, boil noodles. DO NOT ADD SALT TO THE NOODLES.

Drain the noodles when done. Combine everything and pour into a casserole dish. Sprinkle with parmesan cheese. Bake at 350 for 15 minutes.

Note: this makes a lot, so you could probably cut the recipe in half. This will also freeze well for later. :)

Cakes and pies, cakes and pies

Incredibly moist chocolate cake

1 pkg Devil's Food cake
1 pkg instant chocolate pudding
1 c. sour cream
1 c. milk
1/2 c. vegetable oil
1/2 c. water
4 eggs
2 c. semi sweet chocolate chips
6 tbsp butter
1 c. semi sweet chocolate chips (separate from first two)

Preheat oven to 350 degrees.
Grease and flour pan.
Combine cake and pudding mixes, sour cream, milk, oil, water and eggs.
Beat four minutes and mix in 2 c. chocolate chips.
pour batter into pan
40-50 mins baked
let cool 10 mins.

The cake is incredibly rich and moist but for a glaze over the top melt the butter and 1 c. chocolate chips in the microwave. Stir and drizzle over the cake.
It would be good with rasberries too.

My aunt's apple thing

2 cans crescent rolls
6 apples
1 c. sour cream
1 c. cream cheese
cinnamon
1/2 stick of butter
brown sugar

Preheat oven to 350 degrees.
cut apples into pieces, melt all butter in a pan and pour the apples in. Sprinkle cinnamon and brown sugar to taste and cook until apples are soft.
Take off the burner.


Mix sour cream and cream cheese together. Add a little cinnamon and sugar if desired.
Roll out the crescent rolls flat. Spread cream cheese/sour cream mixture, and spoon some of the apple into it, and carefully roll up to create a pinwheel.
Bake at 350 for 30 minutes or until cooked all the way through.
A good breakfast food.
